MOM'S SPECIAL MUTTON BRIYANI
Briyani is a rice dish of Indian sub-continent. It is made with some Indian species. It is a dish that acquired niche in South Asian cuisine served as a main dish for feast. It is not surprising for people carving for briyani rice with different flavour even for non Indians. The rice used for briyanies are basmati, jeeraga samba it gives a nice flavour and aroma to the dish. Let's check out the recipe.
Ingredient
Basmati / jeeraga samba rice - 1/2 kg
Mutton - 1/2 kg
Onion - 2
Tomato - 2
Coconut milk -2 cups
Coriander leaves - 1 cup
Pudina leaves - 1 cup
Ginger garlic paste - 3 TSP
Briyani masala powder - 4 TSP
Curd -1/2 cup
Green chilli - 4
Bay leaf - 2
Patta - 2 stick
Cardamom - 2
Grind sombu and kaskas and add
Lemon -1/2
Ghee -2 TSP
Refined oil ,coconut oil - 2 TSP
Roasted cashew in ghee
Let's start doing...
Rinse the basmati rice and soak for 1/2 hr.
Cut all these things.
Place a cooker pour ghee and oil.
Add all spices
Now add mint and coriander leaves and close the lid fr 2 min then only the flavour won't come out.
Add onion,Ginger garlic paste.
Add tomatoes, green chilli, briyani powder.
Saute for 5 mins and add curd.
While combining all these add mutton pieces saute for another 5 mins.
Now it's time to add 1 cup coconut milk add salt close the lid and cook mutton for 6 whistles.
When pressure released open the cooker add rice and remaining 1 cup coconut milk and manage the water range of it.keep measurements 1 cup rice for 2 cups water and squeeze the lemon now add fried cashew.
when it starts boiling,close the lid and keep 1 whistle or simmer 10 min.
Open the lid after the pressure completely released..add 1 TSP for ghee mix well and serve hot with raita.
